Last Sunday it was Thanksgiving in Germany (Erntedankfest) and my son and I went to the pumpkin (Kürbis) fair at our local botanic gardens. I bought a butternut squash (Flashenkürbis, see picture) for the soup and a hokaido pumpkin for the gluten-free bread, which I make without flour but with flaxseed (Leinsamen), ground almonds (gemahlen Mandeln) and baked pumpkin, see recipe below.
2 cups of blanched almond meal
1 teaspoon aluminum-free baking powder
¼ cup of ground flaxseed
1 heaped tablespoon coconut oil/fat
a pinch of sea salt,
2 tbsp pumpkin pie spice (my mix: curcuma, nutmeg, cinnamon, cloves, anis seeds, cardamom, ginger)
¼ cup coconut oil
2 cups of baked pumpkin
2 tbsp sesame seeds
Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius. Mix all ingredients thoroughly. Grease a loaf tin with a small amount of coconut oil, put the mixture into a baking tin and sprinkle with sesame seeds. Bake for 40 minutes or until an inserted knife comes out mostly clean. Note: the bread is very moist and the almond meal does not act the same as regular flour so an inserted knife will never come out totally clean, but the bread should be firm on top. You can add raisins to the dough mixture if you like it sweet.
I love the harvest season, all that produce that Mother Earth showers on us, it’s incredible. My son, who is always hungry, especially after the uphill bike ride we went on to get to the botanic gardens, sampled pumpkin bread with pumpkin jam (Kürbismarmelade) there and gave it a thumbs up. At our local botanic gardens they grow their own pumpkins, all organic, so no GMO (genetically modified organisms) in there, thank heavens.
Mike Adams, the self-proclaimed health ranger of the Natural News channel/website has written a cute Sesame Street-like protest song about this crucial issue. Did you know that genetically modified corn, which accounts for 85% of the non-organic corn on the market, causes cancer in rats? Especially children are at risk as it is in nearly every breakfast cereal and it most probably won’t be declared on the label either (think Kellog’s cornflakes)!
Greenpeace has reported that China and the USA are also involved in genetically modifying rice on a major scale….
